Ingredients
  

  • 1 Onion
  • 1 kg Goat Meat
  • 1.5 tbsp Curry Powder
  • 1/2 tbsp Allspice (Pimento) Powder
  • 1/2 tesp Garlic Powder
  • Ginger Powder
  • Black Pepper
  • Vegetable OIl
  • 2 Garlic Cloves
  • 2 Scotch Bonnet/ adjust for spice level
  • 2 sprigs Fresh Thyme
  • 1 Carrot
  • 1/2 Bell Pepper

Equipment

  • 1 Chopping Board
  • 1 Sharp Knife
  • 1 Mixing Bowl

Method
 

  1. Please wash your meat with Lemon/ white vinegar, water
  2. *Marinate the Goat* In a large bowl, combine the meat with Curry Powder, Ginger Powder, Black Pepper, Onion Powder, Ginger Powder Black Pepper ans Sea Salt. Mix well and let it marinate for at least 1-2 hours preferably overnight in the fridge
  3. **Sauté the Aromatics:**   – In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and minced ginger. Sauté until the onion is translucent.
  4. Add the Goat:**   – Add the marinated goat meat to the pot and brown it on all sides, stirring occasionally.

  6. Add Liquid and Simmer:**   – Pour in the water or goat broth, and add the whole Scotch bonnet peppers and thyme. Bring to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the goat meat is tender. Stir occasionally and add more water if necessary.
  7. **Add Vegetables:**   – If using, add the sliced carrots and chopped bell pepper about 20 minutes before the cooking time is up. Cook until the vegetables are tender.
  8. *Adjust Seasoning:**   – Taste and adjust the seasoning with more salt or spices as needed.
  9. **Serve:**   – Remove the Scotch bonnet peppers before serving. Serve the curry goat hot with rice, roti, or your favorite side dishes.
